“Healthy” Nachos
Ingredients:
Mexicano Corn Chips
1/2 an onion
2 cloves of garlic
1/4 capsicum
1/2 carrot
Tin of Mexican beans
1 cup of grated cheese
Who isn’t trying to sneak extra veggies into their kid's diets? What better way to hide them in Nachos covered with cheese! The measurements aren’t precise and really most veggies will work if they’re grated/chopped small enough.
Cook down some onion, garlic, capsicum and carrot until soft. Add in a can of Mexican beans to heat up. Pour over some Mexicano corn chips and top with cheese. Grill in the oven until the cheese is gooey and melty and then enjoy!
